Executive Chef Matthew Smith has created a quintessentially British menu for the Northern Belle, and signature dishes include the Sussex poacher and caramelised apple served with a truffled Welsh rarebit; and the trilogy of beef with tartare of beef, hot salt beef served with pickled gherkins, and the Hadiesmill smoked cured beef.
